Date Cookies

Nutritional goodness in every bite!! That’s exactly what you get in these 3-ingredient simple yet delicious cookies. Honestly, the hardest part is chopping up your dates, well, that and making sure you don’t eat the whole batch straight out of the oven. Although, all you’re really eating is oatmeal and fruit so go ahead, no judgment here. Using the sweet power of our medjool dates as well as the very ripe bananas, these cookies have absolutely no need for added sugar our oils making them the perfect alternative to all those sugar loaded cookies you buy at the store.

 

So, what makes these cookies so perfect? Oatmeal is rich in fiber which promotes fullness as well as being a great source of vitamins and minerals. Bananas, also introduce resistant starches which keeps us feeling fuller longer and they are highly nutritious. Once you introduce our mighty medjool dates, you have a super nutritional and delicious cookie that just can’t be beat. Medjool dates are loaded with calcium, magnesium, copper, fiber, and three times as much potassium as bananas.

 

Medjool dates have so many health benefits that these cookies really are a powerhouse of a cookie. They make the perfect breakfast cookie and because they come together so easily, believe me, they will be a cookie you will not mind making again and again. They are a constant request in my home.

Ingredients:

  • 6 Chopped Dates (you can add more

or less depending on your preference)

  • 2 Very Ripe Bananas

  • 1 Cup Quick Oatmeal


Directions:

Preheat oven to 350 degrees and prepare a baking tray with parchment paper.

Mash bananas and add chopped dates and oatmeal. Mix to combine.

Using a spoon create roughly equal sized clumps and press down to form cookie shape.

*Cookies will not spread during baking

Bake for 12 to 15 minutes, or until cookies are lightly golden around the edges.

Let them cool a bit and enjoy.
